I love making things easy for me. Easy should not mean blasé though. One project I started this year is to make a yearly book of menus. I decided to do 6 weeks of menus for each season based on what we eat around here. This is week two of my Winter Menus
We do eat meat as you can see but I do try to not eat a ton of it. So two menus typically will be vegetarian. I also am trying to have more seafood and I am a big fan of Seafood watch. You can check out the best seafood choices for your state here.
Monday
Baked pasta with sun-dried tomatoes.
basically this recipe but I add in the sun-dried tomatoes to the sauce
Tuesday
Green Greens enchiladas
Wednesday
Clam Chowder
I’m gluten free so no flour for me. I just use GFree flour.
Thursday
Sweet and Sour pork
Scroll ALLLLLLLLL the way to the bottom
Friday
Stuffed Cabbage Rolls
I use ground turkey usually
Saturday
seared scallops with apple cider-balsamic glaze
Sunday
Chicken pot pie

Making a yearly book of menus is a really neat idea. I don’t cook much (hate cooking) but I’m looking forward to seeing your menus and checking out the recipes you use. Happy Cooking!
