This is a family recipe, and the one my mom wants every year. It is actually really good and fun to make. This Friday we are having peeling party were my folks will come over, we will have a dinner, and watch a movie while peeling the chestnuts.
4-5lbs chestnuts, 1 white onion. 1 stick of butter. In batches blanch chestnuts (8-10min) transfer to cold water, peel. Chop by hand or food processor.
Melt butter in large pan and saute chopped onion add chestnuts, serve or stuff in bird ( I never put stuffing in my bird ) or bake in a casserole and add a little stock to the casserole so they don’t dry out.
