Roasted tomato sauce

I went to the farmers market and bought 23 pounds of delicious, perfect dry farmed tomatoes. So many options but I knew what I wanted to do. I have been looking around the net for a roasted tomato sauce to put up and in the end I kind of made up my own recipe.

step one give the tomatoes a bath.

step 2 cut em up.

step 3. put cut tomatoes in baking dish. You can actually put more tomatoes in each pan. It really depneds on how long you want to roast them and how carmalized you want them. I also added one small onion per pan, salt, oragano, basil and a wee bit of olive oil.

again aren’t they pretty? The were so yummy that Little sat on the counter and ate a few fresh like slice of apple.  ok into a 375 to 400 degree oven. for at least an hour.

 

 

They will look like this  when done. (yes this is a different batch then the pans above) They smell amazing. I could have left them in another half an hour for more carmelization if I felt like it.

ladle into food processor ( I made a mess. tip don’t over fill the processor)

and process.

ladle into clean jars add 1 tablespoon of lemon juice per pint (these quarts got 2 tablespoons)

Process in a water bath. I think Pints go in for 35 min and the quarts are 60 min. you may want to look that up.

    • oh dear! that is so sad. When I was pregnant I couldn’t even look at a tomato without having pain, but it went away. Do you have pasta? what do you use for sauce?
