Tomato soup

 

 

We have tomato soup a lot in this house. I would say at least 4 times a week for lunch. So today when Little asked for lunch (at 10am no less, this is what happens when she wakes up at 4am) I asked her what she would like and no surprise she said soup. I was going through the soups we had and she was saying no no no. She wanted tomato soup. Usually I just pour it out of a carton. I was out of said carton and told her so. Ever the problem solver, she pointed out that we had a tomato on the counter and maybe I could make soup hot of that. Well hot diggity this kid is smart.

Not knowing how to make tomato soup I decided to consult the “Joy of Cooking” which is my solid go to. Just like normal I read the recipe decided I could make it and I wouldn’t be following it. It was a great lunching pad though. This is how I made our soup and sorry I didn’t do measurements. First the ingredients:

I put a wee bit of olive oil in the pan and diced the tomato. Then I added salt and sautéed for a few minuets. I added a some milk and a few dashes of pepper.

We let it cook for quite some time on medium. making sure to stir it often. Here is little helping out.

at this point I added in the rest of the herbs and since most of the milk had cooked down and off I decided to add some vegetable broth to make it soupy again. I looked everywhere for my immersion blender and couldn’t find it ba! so I poured the contents of the pan into my blender and let er rip.

I was nice and smooth but still with some texture. Very good if you ask me.

We added a little cheese on top and had a wonderful and very yummy lunch. I am hoping that I can can this and put it in quart jars when tomatoes hit the peak of season. It would be really nice to pour it out of our jar as opposed to going back to the cartons.
