We have a couple of family rhythms melding in this photo. One is that on Tuesdays we have Mexican food. The other is that we mark the full moon in our house by having breakfast for dinner. Weather your pagan like me or just like to keep with the rhythms of the natural wold having a special dinner for the full moon is a lovely tradition.
Here is tonight’s creation. The wonderful thing about tacos or burritos is that it is so easy to customize them. So this is mine and it doesn’t look like what Little or my dear Hubby ate. Mostly because I have some strange love for pickled cabbage.
(half a head of red cabbage sliced thinnish, in a lidded container such as a Tupperware. add a tablespoon or two of apple cider vinegar and close and turn over a few times, keeps in the fridge untill you can finish eating it)
To make scrambled eggs with black beans and cheese, place in some sort of tortilla add avocado and salsa on top. Oh and bacon should you like it.
