As I mentioned yesterday, or the day before, I can’t eat bread. So in celebration of Lughnasadh I made some granola. It feels appropriate since the base is oats which of course is another grain. I thought I would share with you. A word of warning though I don’t really do recipes.
this cookie sheet is about 1/2 inch deep. I poured out oats to pretty much fill it and then sprinkled on top of that: pepitas, ground pepitas, silvered almonds, pecan pieces and cinnamon and ginger (powder) then mixed it up.

mix honey, apple sauce and coconut oil in heat proof container. Microwave for 30 seconds at a time until all melted. Stir after each 30 seconds.
Pour about 80% of the wet mixture onto the dry mixture and mix it up good you want to make sure each and every dry bit has been pretty much covered.
Bake at 300 for half an hour. Take out mix in dried cranberries or other dried fruit and shredded coconut. Pour remaining wet mixture on to the pan and mix up. then take your fork and press it down into the pan making it as firm as you can. Bake for another half hour.
The finished yumminess. let cool before you put in containers or it will get soggy.
